ACSH trustee Dr. Henry I. Miller, a Hoover Institution fellow, had a letter in yesterday s The New York Times debunking a July 25 Times op-ed that blames food-borne illness on the centralization and industrialization of the American food system.

The vast majority of food poisoning is caused by individuals mishandling of food, Dr. Miller writes. Common lapses include the mishandling or undercooking of poultry and the inadequate refrigeration of food. More expansive, expensive, onerous regulation is not the answer; better education of consumers is.
